Disney Magic at Home: Delicious Disney Halloween Recipes

Halloween is such a fun time of year! To celebrate all year long and to bring some spooky Disney magic at home, Disney has released some delicious recipes.

For many of us, the Halloween season is a favorite time of year with all the creative costumes (for humans and pets!), festive parties, over-the-top decorations, and, of course, fabulous food!

In honor of our #Halfway2Halloween celebration, I was excited to feature a couple of my favorite Disney Halloween and fall recipes from years past. (Full disclosure – I love anything pumpkin!)

The challenge? I could not decide which were my top two favorites so I turned to my team to select their favorites. The challenge? We had a six-way tie!

So here you go – in no particular order – our favorite autumnal Disney recipes (plus a just plain adorable sugar cookie!) to celebrate Halfway2Halloween. Brisket Mac’n Cheese Recipe from A Touch of Disney at Disney California Adventure Park

Disney Parks has shared another recipe so we can have more Disney magic at home.

Who doesn’t love cheesy, creamy mac ’n cheese? Our Disney chefs fancied up this classic comfort dish by topping with smoked barbecue brisket, pickled red onions, and crispy fried shallots – YUM! We just had to get the recipe to share – it is a crowd-pleaser for sure!

This plate of comfort is currently offered at Smokejumpers Grill during A Touch of Disney and will remain on the menu at the reopening of Disneyland Resort on April 30. Be sure to plan ahead and mobile order through the official Disneyland mobile app for added convenience and to promote contactless payment. Here is a link for additional details on mobile order.

Brisket Mac ‘n Cheese from Smokejumpers Grill at Disney California Adventure Park
Serves 6

PICKLED RED ONIONS

  • 1 red onion, thinly sliced
  • 1 cup white vinegar
  • 2 tablespoons sugar
  • 1 tablespoon coarse salt

CRISPY FRIED SHALLOTS

  • 1 tablespoon all-purpose flour
  • 1 tablespoon cornstarch
  • 1/2 teaspoon coarse salt
  • 1 shallot, thinly sliced
  • 1/2 cup canola oil, for frying

SMOKED BEEF BRISKET

  • 1 pound smoked beef brisket (see Cook’s Note below)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon black pepper

MAC ‘N CHEESE

  • 1 pound elbow macaroni
  • Coarse salt, to taste
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese
  • Black pepper, to taste

TOPPING

  • 1 cup favorite barbecue sauce

FOR PICKLED RED ONIONS:

  1. Place thinly sliced red onions in mixing bowl. Combine white vinegar, sugar, and salt in small saucepan. Bring to a simmer over medium-high heat.
  2. Carefully pour over onions. Cool to room temperature.
  3. Refrigerate until ready to serve.

FOR FRIED SHALLOTS:

  1. Heat oil in frying pan until it reaches 350°F.
  2. Combine flour, cornstarch, and salt in small bowl.
  3. Dip shallots in cornstarch mixture and shake off excess coating.
  4. Fry in hot oil for 1 minute, until crispy.
  5. Drain on paper towels. Set aside.

FOR SMOKED BRISKET:

  1. Shred or chop smoked beef brisket. Season with garlic powder, onion powder, paprika, chili powder, salt, and pepper.
  2. Heat large skillet over medium heat for 5 minutes, until hot. Add brisket and cook for 3 minutes, until hot.
  3. Keep warm until ready to serve.

FOR MAC ‘N CHEESE:

  1. Cook macaroni in salted water, according to package instructions. Drain and set aside.
  2. Melt butter in Dutch oven over medium heat. Add flour and whisk until smooth and light brown in color.
  3. Slowly add milk, whisking to break up any lumps that form. Whisk until milk begins to simmer. Reduce heat to low. Add shredded cheddar and cream cheese. Whisk until smooth. Stir in macaroni. Season with salt and pepper, to taste.
  4. Keep warm until ready to serve.

TO SERVE:

Scoop mac ‘n cheese onto each plate. Add smoked brisket. Top with drizzle of barbecue sauce, pickled red onions, and fried shallots.

COOK’S NOTE: You can smoke your own brisket at home following directions for your particular smoker or simply pick up sliced smoked brisket from your favorite barbecue restaurant.

Recipe for Passion Fruit Mousse With Dragon Fruit Jam

Disney is continuing to share more Disney Parks recipes and this one is from the new Vibrante & Vívido Food Studio at this year’s Taste of EPCOT Festival of the Arts! We’re looking forward to making this one at home.

New Year, new food studio at the Taste of EPCOT International Festival of the Arts! That’s how the saying goes right?

Vibrante & Vívido Food Studio is the new addition to this year’s festival and the food featured is definitely vibrant, vivid and oh so colorful and full of flavors inspired by different cuisines in South America.

Located between Morocco & France, the food studio includes Latin-inspired dishes like a Chilled Seafood Cocktail with Octopus, Scallops, Shrimp, Black Garlic Aïoli, Tomato-Coconut Sauce, and Serrano-Lime Oil; a Blue Corn Pupusa-stuffed with Cheese and topped with Shredded Pork, Guajillo and Árbol Chile Sauce, Cabbage Slaw, and Aji Amarillo Crema (Gluten/Wheat Friendly) and a Passion Fruit Mousse with Dragon Fruit Jam.

Some of the beverages that you can find at this new studio are a coconut and passion fruit smoothie (non-alcoholic), a frozen piña colada and a passion fruit daiquiri.

For those at home that would love to make one of these dishes at home, here’s a recipe for the Mousse de Maracuya con Pitaya Roja Jam.

MOUSSE DE MARACUYA CON PITAYA ROJA (PASSION FRUIT MOUSSE WITH DRAGON FRUIT JAM)

Makes 12 Servings 

Dragon Fruit Jam 

  • 1 (12 ounce) bag frozen red dragon fruit
  • 1 cup sugar
  • 1 tablespoon lime juice

Mousse de Maracuya 

  • 1/4 cup sugar
  • 1 cup passion fruit purée
  • 1 cup chopped white chocolate
  • 1 1/2 cups heavy whipping cream
  • Reserved dragon fruit jam

Sugar Cookies 

  • 3/4 cups butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Dragon Fruit Glaçage 

  • 15 gelatin sheets
  • 2 cups ice water
  • 1 1/4 cups frozen red dragon fruit
  • 1 1/2 cups sugar
  • 1 (14 ounce) can sweetened condensed milk
  • 4 cups chopped white chocolate

Passion Fruit Sauce 

  • 2/3 cup passion fruit purée
  • 1 tablespoon lime juice
  • 1/2 cup sugar

Directions:

For Dragon Fruit Jam:

  1. Combine dragon fruit, sugar, and lime juice in small saucepan. Cook over medium-high heat until liquid begins to boil. Reduce to simmer and cook for 20 minutes, stirring occasionally, until thick.
  2. Place in medium bowl and cool for 30 minutes. Blend with immersion blender until smooth.
  3. Refrigerate until ready to use.

For Mousse de Maracuya:

  1. Combine sugar and passion fruit purée in small saucepan. Cook over medium heat for 5 minutes, until hot but not boiling.
  2. Place white chocolate in medium glass bowl. Pour hot passion fruit mixture on top and rest for 2 minutes. Stir until chocolate is melted and mixture is smooth.
  3. Cover and refrigerate for at least 4 hours.
  4. Whip heavy cream in bowl of electric mixer fitted with whisk attachment until stiff peaks form. Gently fold whipped cream into chilled passion fruit mixture.
  5. Transfer mousse to piping bag fitted with large round tip.
  6. Fill twelve 3 1/4 x 2 1/8 x 1 1/4-inch rectangular silicone molds half way full with mousse.
  7. Pour reserved dragon fruit jam into piping bag fitted with small round tip. Carefully pipe a thick strip of jam into the center of each mold, being careful to avoid the edges.
  8. Fill each mold with remaining mousse, filling to top.
  9. Freeze for a least 4 hours, or overnight.

For Sugar Cookies:

  1. Cream together butter and sugar in bowl of electric mixer fitted with paddle attachment. Add eggs and vanilla and beat on medium speed until mixed. Add flour, baking powder, and salt, and mix on low speed until soft dough forms.
  2. Cover and chill dough in refrigerator for at least one hour.
  3. Preheat oven to 325°F. Line 2 baking sheets with silicone baking mats.
  4. Roll dough on floured surface into 1/4-inch thick rectangle. Cut into twelve 3 1/2 x 2 1/2-inch rectangles.
  5. Place 6 cookies on each baking sheet. Bake 12-15 minutes, until golden brown.
  6. Cool completely.
  7. Once cookies are cool, place all 12 cookies on parchment-lined baking sheet. Set aside.

For Dragon Fruit Galçage: 

  1. Bloom gelatin sheets in ice water.
  2. Heat dragon fruit and sugar in small saucepan over medium heat until boiling.
  3. Drain excess water from gelatin sheets.
  4. Add gelatin and sweetened condensed milk to boiling sugar mixture.
  5. Place chopped white chocolate in large bowl. Pour warm mixture over white chocolate. Let sit for 2 minutes.
  6. Carefully blend with immersion blender until chocolate and dragon fruit are smooth.
  7. Cool to 90°F.

For Passion Fruit Sauce:

  1. Place passion fruit purée, lime juice, and sugar in small saucepan. Cook over medium-low heat, until boiling.
  2. Simmer for 5 minutes, until sauce thickens and begins to reduce.
  3. Remove from heat and cool to room temperature before use.

To serve: 

  1. Remove frozen mousse from molds. Place on baking sheet lined with silicone baking mat.
  2. Pour 2 1/2 cups of the 90°F dragon fruit glaçage into liquid measuring cup. Carefully pour on top of the frozen mousse, making sure edges and sides are covered. Set in refrigerator for 30 minutes.
  3. Reheat remaining glaçage in a saucepan over low heat until it reaches 90°F. Pour into liquid measuring cup and pour over mousse for a second coat.
  4. Place one mousse onto the center of each cookie. If mousse is too soft, place in freezer for 10 minutes before moving. Refrigerate until ready to serve.
  5. Place 1 tablespoon of passion fruit syrup on each plate. Spread evenly into a circle with a pastry brush or by pressing the flat edge of drinking glass against the syrup.
  6. Place cookie with mousse on sauce to serve.

Cook’s Note: Refrigerate any leftover jam in a sealed container – it’s delicious spread on warm buttered toast.

Disney Magic at Home: Disney Park Churro Bites Recipe

These past few weeks, we’ve seen many of you sharing Disney recipes and creating your very own magical moments right at home. Being a BIG fan of Disney Parks snacks myself, this has inspired us to share one of my favorite recipes so you can continue creating #DisneyMagicMoments.

While our parks are temporarily closed, you can still enjoy a delicious Disney churro – because you can make them yourself at home!  This recipe is inspired by the delicious snack that can be found at all of our parks across the globe. The recipe serves four people.

Disney Parks Churro Bites

Ingredients

  • 1 cup water
  • 8 tablespoons butter
  • ¼ teaspoon salt
  • ¾ teaspoon ground cinnamon, divided
  • 1 ¼ cups all-purpose flour
  • 3 eggs
  • 1 ½ cups vegetable or canola oil
  • ½ cup sugar

Instructions

  1. Combine water, butter, salt, and ¼ teaspoon cinnamon in 1 ½-quart saucepan over medium heat. Bring pot to rolling boil.
  2. Reduce heat to low.
  3. Add flour and stir vigorously until mix forms a ball. Remove from heat and let rest for 5-7 min.
  4. Add eggs, one at a time, and stir until combined. Set aside.
  5. Heat oil in medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚.
  6. Spoon dough into piping bag fitted with large star tip. Pipe 1-inch strip of dough over saucepan, cut with knife, and drop into hot oil. Repeat until churro bites fill saucepan with room to fry.
  7. Fry churro bites until golden brown. Remove with slotted spoon or mesh spider strainer.
  8. Drain churro bites on paper towel.
  9. Mix sugar and ½ teaspoon cinnamon in medium bowl. Toss in churro bites until coated. Place on serving plate and serve with favorite dipping sauce.

Family Time this Holiday Season with a Kidcot Fun Stop Activity and New Recipe

With the holidays approaching, I wanted to share some stay-at-home fun activities that will be perfect for any family get-together!

For starters, you may know that at EPCOT, kids are invited to join Mickey and friends on an adventure around World Showcase. Each of the countries has a Kidcot Fun Stop presented by Ziploc Brand, a place where kids can collect a special traveler’s card that features a special fact about that country and a corresponding coloring sheet.

Today, we are bringing one of our favorite Kidcot Fun Stops right into your home!

Did you know that in Germany, if you want to find a bakery, you just have to look for a pretzel hanging above the shop door – the emblem of the bakers guild? From the looks of this coloring activity, it looks like Chip & Dale have found their new favorite treat that is famous in Germany – you guessed it, a pretzel!

Speaking of bakeries, we also have a special treat you can make at home!

From the pastry chefs over at Disney’s Contemporary Resort, this recipe is one of my favorites for two reasons – it’s EASY to make, and it combines two of my favorite things – chocolate and peanut butter!

If you have been following our #DisneyMagicMoments recipes, you know that Ava, a 13-year-old junior chef and daughter of Disney photographer Matt Stroshane, has been making “how-to” videos for some of these recipes in her home kitchen with the help of her personal sous chefs (mom and dad) and official taste tester (her 11-year-old brother, Adam). Check out the recipe and Ava’s video below.

No-Bake Granola Treats from Disney’s Contemporary Resort Bakery
Makes 12 (2×2-inch) treats

Ingredients: 

  • 3 1/2 cups miniature marshmallows
  • 2 tablespoons unsalted butter
  • 3 tablespoons smooth peanut butter
  • 1 1/2 cups granola
  • 1/4 cup miniature semisweet chocolate chips

Directions: 

  1. Melt marshmallows and butter in medium saucepan over low heat. Add peanut butter, stirring to combine. Remove from heat. Stir in granola.
  2. Spoon mixture into 8×8-inch baking dish. Lightly press mixture into pan.
  3. Sprinkle top of mixture with chocolate chips, lightly pressing the chocolate chips into mixture.
  4. Set aside at room temperature to cool for 30 minutes. Cut into 12 pieces.
  5. Store treats in an airtight container at room temperature.

Cook’s Note: This recipe can easily be doubled if you like thicker treats!
