EPCOT Festival Recipe – Rocky Road Cake

Chocolate lovers rejoice! Disney has once again shared a recipe for an item available at the EPCOT Food and Wine Festival!

From a Disney Cast Member;

The EPCOT International Food & Wine Festival presented by CORKCICLE is in full gear! There are so many amazing foods to try. This year’s festival menus were filled with recipes I wanted to test and share with the home cook. One dessert that really stood out was the Rocky Road Cake at the Flavors from Fire Global Marketplace. I was thrilled to have the opportunity to test this recipe!

When I came home from the store with marshmallows and chocolate, the taste testers in my house were excited. After having a chance to taste the final product, they were not disappointed. One of the taste testers revealed that reheated leftover cake made an excellent breakfast the next morning.

Some of my favorite desserts to bake are ones that look time-consuming and difficult but are secretly easy to make. This Rocky Road Cake is a perfect example of that. The cake is delicious and does not take much more time than a standard chocolate cake. The individual cakes topped with marshmallows, almonds, and ganache really set this apart from an everyday chocolate cake. Rocky Road Cake is going on my list of desserts to make again.

Now that I’ve talked it up- it’s time to share the recipe!

ROCKY ROAD CAKE – EPCOT International Food & Wine Festival
Serves 8

SPICY SUGARED ALMONDS

    • 1/3 cup plus 1 teaspoon sugar, divided
    • 1/8 teaspoon cinnamon
    • 1/8 teaspoon ground cayenne
    • 3 tablespoons water
    • 3/4 cup unsalted almonds

CHOCOLATE GANACHE

    • 6 ounces dark chocolate, chopped
    • 2/3 cup heavy cream

CHOCOLATE-BUTTERMILK CAKE

    • 1 cup all-purpose flour
    • 1 cup granulated sugar
    • 1/4 cup unsweetened cocoa powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 egg
    • 1/2 cup vegetable oil
    • 1/2 cup buttermilk
    • 1/2 cup hot water

TOPPINGS

    • 1 cup mini marshmallows
    • Sea salt
    • Reserved chocolate ganache

FOR SPICY SUGARED ALMONDS:

    1. Line a baking sheet with parchment paper; set aside.
    2. Combine 1 teaspoon sugar with the cinnamon and cayenne in a small bowl; set aside.
    3. Stir remaining 1/3 cup sugar and water in a medium saucepan over medium-high heat until boiling. Carefully add almonds and stir frequently for 8-10 minutes, until water evaporates. Continue stirring for 2-3 minutes, until sugar begins to caramelize. Sprinkle cinnamon reserved mixture over almonds and stir to mix.
    4. Carefully pour almonds onto prepared baking sheet, separating with spatula.
    5. Cool completely, then coarsely chop. Store in airtight container up to 3 days.

FOR CHOCOLATE GANACHE:

    1. Spray eight 6-ounce ramekins with non-stick cooking spray; set aside.
    2. Place chopped chocolate in a medium glass bowl.
    3. Bring heavy cream to simmer in small saucepan over medium heat. Pour over chocolate. Let chocolate sit for 5 minutes, then stir until smooth.
    4. Place 1 1/2 tablespoons of ganache in each ramekin and refrigerate for 20 minutes.
    5. Keep remaining ganache at room temperature until ready to serve.

FOR CHOCOLATE-BUTTERMILK CAKE:

    1. Preheat oven to 350°F.
    2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add egg, oil, and buttermilk. Whisk to combine. Carefully add boiling water and whisk until batter is smooth.
    3. Remove ramekins filled with ganache from refrigerator and fill each with 1/3 cup cake batter. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
    4. Cool 5-10 minutes before serving.

TO SERVE:

Carefully remove cakes from ramekins. Top each rock road cake with 2 tablespoons of mini marshmallows and 1 tablespoon of spicy-sweet almonds. Warm chocolate ganache in the microwave for 30 seconds on 50% power. Drizzle ganache over each cake and sprinkle with sea salt.

NoteAlways use caution when handling sharp objects and hot contents. Please supervise children who are helping or nearby. This recipe has been converted from a larger quantity in restaurant kitchens. The flavor profile may vary from the restaurant’s version.

A: Well, I came from a family of 17 kids. I discovered my love for cooking over a fire when my family would gather for cookouts, the 4th of July, and other occasions in the backyard. There were just so many positive memories of togetherness, and grilling was something I enjoyed – hot dogs, pork steaks, chicken – I loved it all. I carried that passion with me into the Navy, where I cooked. And, when I got out, I would see BBQ TV shows and competitions, and I said, “That’s me, that’s what I do.” I entered my first cookoff in 2006, and the rest is history.

Q:  You mentioned coming from a huge family. Tell us about your family now and how it has impacted your journey.
A:  I’m living the dream. I have a very supportive wife and 4 daughters, ranging in ages 12-26, with 2 female dogs and 2 female cats. Because of all the women, I get to do my own thing – cooking over fire. Princess Tiana is one of my daughters’ favorite princesses. I love all things sci-fi. Star Wars: Galaxy’s Edge is one of the things we want to do on our next visit to Walt Disney World Resort, but EPCOT is our favorite park. We love the food, the atmosphere – there is something to do for everyone.

Q: How do you see the future of BBQ?
A: BBQ is Americana, and it has gone global, no matter what country or culture. Whether in Sweden, the Netherlands, or New Zealand, all people have cooked over a fire – from a strip of goat to Asian-style ribs. I’ve gotten ingredients from all over, from my favorite Korean grocery store to using my own seasonings. It’s a happy food where people gather around, have fun and make memories. It has such humble beginnings anchored in survival to just feeding people. It has now transcended into an anchor for family gatherings and the focal point of feel-good moments from the backyard, city park to now theme parks.

Q: What are some of your certified go-to BBQ dishes?
A: I love a good brisket sandwich. Especially good brisket – that bends when you fold it over itself. Or BBQ that doesn’t even need sauce. That’s when you know it’s grilled to perfection. And sides. When you think about the different ways baked beans are prepared, or your favorite mac and cheese, your various slaws, etc., those complement your protein and vice versa.

Q: What’s next for you?
A: I’m traveling to Alaska to cook for an Air Force base and soon traveling to Pearl Harbor to cook for the military there. I’ll continue teaching my BBQ classes. My goal with these classes is to teach others to make outstanding middle-of-the-road BBQ. During Covid, I did these classes virtually from my backyard. Also up is Walt Disney World Resort! In addition to tasting some great BBQ, I’m looking forward to visiting EPCOT, my family’s favorite park, and Disney’s Hollywood Studios to see Star Wars: Galaxy’s Edge. Disney’s Animal Kingdom Theme Park is so cool! The Tree of life and the Avatar Flight of Passage are our favorites.

Disney’s Victoria & Albert’s Returns With Exquisite Dining Experiences

The time has come for the culinary crown jewel of the Walt Disney World Resort – Victoria & Albert’s – to welcome guests back to this one-of-a-kind experience at Disney’s Grand Floridian Resort & Spa. Beginning today, July 28, this location is now open and filled with unrivaled flavors expertly crafted by the talented culinary team as well as an enhanced and renovated interior space that will leave guests in awe.

There is a reason this AAA Five Diamond Award and Forbes Travel Guide Five Star Award recipient is considered the crown jewel – its decadent cuisine features only the highest quality of ingredients and flavors from across the globe. With an ever-evolving menu, guests can taste their way through multiple courses, including Glacier 51 Toothfish with charred mushroom and sambal, Heirloom Tomatoes with gazpacho and 100 Year Balsamico, and Carrot Tikka Masala with cilantro and puri bread. For a sumptuous finish, the Spectrum of Chocolate is an ombré delight from the inside out featuring four specialty sourced chocolates and a tableside presentation of sabayon with notes of Madagascar vanilla bean, Champagne, and Grand Marnier.

In addition to the incredible dishes at Victoria & Albert’s, this location is also home to a world-class wine collection featuring over 500 different selections. Sommeliers on staff are there to guide you through this precisely curated collection and perfectly pair the flavors of the glass and plate. The new zero-proof cocktail pairing will allow everyone to fully experience the evening with beverages crafted to complement each course. One innovative offering on this menu is the Guajillo Spice, which is smoked tableside to highlight the rich flavors of roasted guajillo chilis, charred jalapeños, and black peppercorn, as well as a touch of caramelized sweetness from turbinado sugar and fresh lime.

The opulence and elegance that are in every corner of the restaurant are part of what makes it so unique. The newly renovated interior features exquisite crystal chandeliers, masterful murals, and delicate wall coverings that bring a modernization to this lavish location. There are three different dining options, each with their own unique experience. The Dining Room serves a tasting menu, that highlights seasonal flavors expertly created to give guests and their palette the very best.

For those interested in a more intimate dining experience, the Queen Victoria Room allows guests to savor a menu created by the chef de cuisine especially for them in a setting fit for royalty, including tableside presentations. The Chef’s Table is a one-of-a-kind experience that allows first-hand account to the culinary craft as the team creates their decadent tasting menu. This unique opportunity allows them to interact with the chefs like no other as the guests of the kitchen, our most coveted offering.

The legacy of this restaurant is not to be overlooked. Victoria & Albert’s is not only the sole location in Florida to hold the honor of having both the AAA Five Diamond and the Forbes Travel Guide Five Star awards but joins only 26 others in the nation with this same unique distinction.

The culinary team that upholds this legacy is now led by Chef de Cuisine Matthew Sowers, with more than 15 years spent at Victoria & Albert’s and experience assisting in the creation of acclaimed menus for Remy on the Disney Dream and Disney Fantasy. Joining him is Pastry Chef Kristine Farmer who not only was part of the opening team at Disney’s Grand Floridian Resort & Spa, but also leads the entire pastry team for this resort.

For over 20 years, Sommelier Israel Perez has been dedicated to creating memorable experiences at signature restaurants across Walt Disney World Resort. As the maître d’hotel, Israel and his team ensure that each person who walks through the doors of Victoria & Albert’s has a perfect evening through each step of service.

Overseeing culinary operations and teams of the 13 food and beverage outlets at our flagship resort is Executive Chef Kevin Chong. Last but certainly not least, is Culinary Director Chef Scott Hunnel, who was at the helm of Victoria & Albert’s for many years, now provides his expertise and mentorship to culinary teams across multiple resorts, including Disney’s Grand Floridian Resort & Spa.

When enjoying an evening with your guests here, it’s clear that Victoria & Albert’s provides an epicurean experience that is unlike any other. From the moment guests arrive and are welcomed with beautiful harp music, to the expert chefs creating magic from the kitchen to the plate and the sommeliers transporting them through each pairing, a meal here is one that cannot find anywhere else.

We are delighted to welcome guests back to Victoria & Albert’s and cannot wait for everyone to join us for a grand evening from first sip to last bite.
