Disney Magic at Home: Beef Bourguignon Recipe

It’s time to try another Disney Park recipe at home! This time we’re looking forward to Beef Bourguignon from the Canada pavilion offered during the Taste of EPCOT International Festival of the Holidays!

Beef Bourguignon debuted at Taste of EPCOT International Festival of the Holidays this year and has quickly become the dish “not to miss” for festival-goers. Offered at Yukon Holiday Kitchen located at the Canada pavilion, this hearty classic dish has it all – fork-tender beef brisket with savory flavors of bacon-infused wine sauce over crushed buttery red potatoes. What’s not to love?

The EPCOT chefs gladly shared the recipe … it is one of their favorite dishes as well!

BEEF BOURGUIGNON
Taste of EPCOT International Festival of the Holidays
Serves 6

BEEF BOURGUIGNON

  • 1 tablespoon butter
  • 6 ounces smoked bacon, diced
  • 3 pounds beef brisket, trimmed and cut into 2-inch pieces, or stew meat
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 1 large white onion, diced
  • 1 large carrot, peeled and cut into 1/2-inch slices
  • 1 pound crimini mushrooms, quartered
  • 1 tablespoon fresh chopped rosemary
  • 1 tablespoon fresh chopped thyme
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 3 cups red wine (Merlot, Pinot Noir, or Chianti)
  • 2 cups beef broth
  • 1/2 cup sherry vinegar
  • 12 small fresh or frozen pearl onions, peeled
  • 2 tablespoons fresh chopped parsley, divided

CRUSHED RED SKINNED POTATOES

  • 1 tablespoon salt, plus more, to taste
  • 3 pounds red-skinned potatoes, washed
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons sherry vinegar
  • White pepper, to taste

FOR BEEF BOURGUIGNON:

  1. Heat butter and bacon in a large Dutch oven over medium heat and cook until bacon is brown and beginning to crisp. Remove bacon with a slotted spoon and set aside.
  2. Pat beef dry and season generously with salt and pepper. Sear in Dutch oven with butter and bacon fat, 1-2 minutes per side, until browned. Remove from pan with slotted spoon and set aside.
  3. Add garlic, onion, carrots, and mushrooms and sauté 6 minutes, until vegetables begin to soften. Stir in rosemary and thyme.
  4. Add tomato paste and cook, stirring often, for 3 minutes, until paste begins to caramelize, but does not burn.
  5. Return beef and bacon to pan. Add flour and stir constantly for 5 minutes. Add wine, beef broth, and vinegar and stir to deglaze pot. Add pearl onions and bring to a boil over high heat. Reduce to a simmer and cook, covered, stirring occasionally, for 1 1/2 hours until meat is tender and sauce is thickened.  Add 1 1/2 tablespoons of parsley and season with salt and pepper, to taste.
  6. Keep warm until ready to serve.

FOR RED SKINNED CRUSHED POTATOES:

  1. Bring a large stockpot of water to a boil. Add 1 tablespoon salt and the potatoes and boil for 10-15 minutes, until soft. Drain potatoes.
  2. Return potatoes to pot and mash with a hand masher or electric mixer until just broken. Add butter, sour cream, vinegar, and mash until potatoes are mashed, but still lumpy.
  3. Season with additional salt and white pepper, to taste.

TO SERVE:

Divide potatoes among 6 bowls. Ladle beef bourguignon on top of potatoes and garnish with remaining chopped parsley.

Space 220 Restaurant Opening September 20th

Zack Riddley just Announced on his Instagram that Space 2020 Restaurant will be opening September 20th at EPCOT. To quote him: “Get ready for and out-of-this-world experience at EPCOT, Space 220 is opening on September 20th!”

On the Walt Disney World website, this is how they explain what this new Dining Experience will be like:

“Embark on the ultimate culinary exploration from this new expansion of the Mission: SPACE pavilion.

Step inside Space 220—a celestial panorama of a space station—for a delicious meal! As you dine, peer out and enjoy amazing daytime and nighttime views of Earth from 220 miles up.

To begin your journey, board a special space elevator that will ascend to the stars! Along the way, viewports will give you an aerial view of Epcot as you travel high above the planet.

Upon your arrival, you will dine from a menu featuring modern American cuisine, out-of-this-world cocktails and a wide selection of craft beer.”

This is all that Walt Disney World has announced about this new dining option, but they say to check back for more information. This looks like it will be a unique dining experience, and we are very excited to see what it will be like. That gives another option of something new to experience at EPCOT. On October 1st, there are other new additions coming to this Park. Remy’s Ratatouille Adventure will open as well as the brand new firework show Harmonious. If you are going to be at EPCOT in September you will also have one more chance to catch EPCOT Forever before it is gone. The final showing will be on September 28th, 2021. There are lots of exciting things coming for the 50th Anniversary all over the Walt Disney World Resort.

La Crêperie de Paris Menu – Coming Soon to the France Pavilion in EPCOT

We’re just over a month away from a delicious new restaurant, La Crêperie de Paris, opening on October 1, 2021 in the newly expanded France pavilion in EPCOT. The restaurant will offer both table- and quick-service options. Remy’s Ratatouille Adventure, the restaurant, and the pavilion expansion are all part of the historic transformation of EPCOT currently underway. 

When the newly expanded France pavilion at EPCOT debuts on October 1, helping kick-off “The World’s Most Magical Celebration” in honor of the 50th Anniversary of Walt Disney World Resort, you’ll be immersed in some of France’s signature sights, sounds, smells, and – of course! – tastes. One of the most delicious offerings, La Crêperie de Paris, is a traditional crêperie with a menu inspired by the Brittany region of France. The table- and quick-service restaurant, where everything is made from scratch and to order, will serve savory galettes and sweet dessert crêpes, along with some of Brittany’s famous hard ciders. Read on to learn all about the menu!

Like all galettes and crêpes from Brittany, La Crêperie de Paris will serve them very thin. The galettes will be cooked at a high temperature, allowing the outside to become crispy and crunchy, surrounding an irresistible array of fillings. The gluten-friendly savory galettes will be made with buckwheat imported exclusively from France and will feature classic fillings with some unique twists. Perhaps the best-known combination – and perfect for breakfast, lunch, or dinner – is the Classique that includes ham, eggs, and Swiss cheese. Perfect for any vegetarian diner and inspired by the “Little Chef” himself, The Ratatouille is filled with tomato, zucchini, and eggplant.

The sweet crêpes are also thin, crispy, and made from scratch. From the traditional Gourmande, filled with house-made hazelnut chocolate spread, to the Pomme, filled with caramelized apples and caramel beurre salé, the dessert crêpes are guaranteed to satisfy everyone’s sweet tooth. You can even top these decadent delights with house-made ice cream!

To round out the authentic French experience, La Crêperie de Paris will serve traditional Brittany hard ciders that pair perfectly with both savory galettes and sweet crêpes. From the sweet doux to the less sweet brut and demi sec, the hard ciders are imported from France and made only with apples that Brittany is known for.

The restaurant will also offer a daily prix fixe menu that includes a choice of soup or a salad, one savory galette, one dessert crêpe, and a glass of hard cider, soda or juice. The full menu of savory and sweet crêpes features:

    • Classique: ham, egg, Swiss cheese
    • Poulet: chicken, bechamel cheese sauce, mushrooms
    • Chèvre: goat cheese, spinach, walnuts
    • Saumon: smoked salmon, crème fraiche, chives, lemon
    • Ratatouille: tomato, zucchini, eggplant
    • Savoyarde: Raclette cheese, onions, imported Bayonne ham

SWEET CRÊPES

    • Gourmande: hazelnut chocolate spread, whipped cream
    • Banane: banana, caramel beurre salé
    • Melba: peach, red berries sauce, almonds
    • Poire: pear, chocolate ganache, whipped cream
    • Pomme: caramelized apples, caramel beurre sale

For diners looking for a quick-service option, check out Crêpes À Emporter at La Crêperie de Paris. The walk-up window attached to the restaurant will serve three savory galettes, four sweet crêpes, soft serve ice cream, and an assortment of ciders and wines.

New Details for California Grill 50th Anniversary Dining Experience

Today, Disney announced further details about the special 50th anniversary dining experience coming to California Grill at Disney’s Contemporary Resort.

“Upstairs at California Grill, a new dining experience will also be available later this year, featuring a limited-time menu with items inspired by the restaurant’s history,” the announcement states.

We noticed a few weeks ago that reservations were unavailable for California Grill after October 2. The reservations page mentioned a “special dining experience for the 50th anniversary celebration of Walt Disney World Resort.” 

New Dining Experiences Coming to Disney’s Contemporary Resort

We’re cooking up new experiences at Disney’s Contemporary Resort for “The World’s Most Magical Celebration!” 

Located just off the lobby, Steakhouse 71 will be a new casual themed dining concept that gets its name from the resort’s opening year and will be open in time for the celebration. 

Upstairs at California Grill, a new dining experience will also be available later this year, featuring a limited-time menu with items inspired by the restaurant’s history. 

While these experiences are not yet available for reservations, we look forward to sharing more information soon.
